Canada Day Cocktail

Around here whenever there's a party or celebration, I like to have a signature cocktail or punch. So in honour of Canada Day which we Canadians celebrate on July 1st, here's a cocktail all red and white. Okay, the ice cubes count as the white and they're actually clear, but who's judging.

It all starts with a simple jug of "sun tea". That's how I make my ice tea - by filling a jug with water, popping in a three or four tea bags and sitting it in the sun for a couple of hours. This is how I make all my ice tea. We Canadians don't have the same affinity for cold tea as the Americans. But I love it! So as soon as I cross the border I order an ice tea - tall, cold and unsweetened. Nothing like it on a hot day. Anyways, I digress.......For this cocktail, I used Berry Burst tea - it's a mixture of rosehip tea with some strawberry and raspberry flavors added in for the berry taste.

Of course, you can drink it as is in it's natural state. But for this cocktail, I split it with some club soda and added 1 oz. of white rum and some raspberries. You could use vodka too. Or keep it family friendly and omit the alcohol.

Whichever way you serve this, it's delicious and refreshing on a hot July day. A perfect beverage for a Canada Day celebration. I'll be packing a non-alcoholic thermos of this for our day at Long Point beach tomorrow to go along with our picnic of lobster salad sandwiches, potato salad and coleslaw, followed by some chewy chocolate raspberry brownies.

How are you celebrating Canada Day?

That certainly looks delicious! Our Canada Day drink is more likely to be hot chocolate, as we are having cold and rainy weather. Sunshine will eventually rule, though, and then I'll have to give your drink a try.
